I am more of a fan of raw cakes (mostly because I am lazy), but a little chocolate cake never killed nobody. Even though you will need to use an oven, it is relatively easy to make this chocolate cake and it won’t take a lot of time either. And it will be very, very delicious! I promise!
For the cake:
- 1 1/4 flour (works good also with gluten free flour)
- 1 cup powder sugar
- 1/3 cup cocoa powder
- 1 cup water or coffee
- 1/3 vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon apple cider vinegar (works good also without, if you don’t have any apple cider vinegar)
For the glaze:
- 1/2 cup powder sugar
- 5 tablespoons coconut oil
- 7-10 table spoons soy milk (up to taste and how thick you want your glaze to be)
- 2 tablespoons cocoa powder
- 1/2 vanilla extract
1. Bake the cake
Heat up your oven up to 180C (approx. 350F). While oven is preheating, mix together all of the dry ingredients for the cake. When it is done, add wet ingredients and mix them all together. Put the mixture in a baking pan (approx. 20×20 cm) and bake for approximately 30 minutes. Once the cake is baked, let it cool down and start preparing glaze.
2. Make the glaze
For the glaze you basically have to mix all of the ingredients together, but make sure coconut oil has melted before. Start with the dry ingredients in the beginning and add wet ones step by step.
3. Create the cake
When glazing the cake I suggest you to cut the cake into 2 equal pieces so you are getting two layers at the end. Glaze the upper part of the first layer in an equal thickness and, if you wish, add some slices of banana, berries or other treats before placing second layer on them. Glaze second layer in an equal thickness again and make sure you put some glaze around the edges of the cake as well. And, of course, you can decorate the upper part of the cake however you wish!
Wait for the cake to set and cool down for approximately 1-3 hours in a fridge and you are ready to go! It goes great together with a cup of coffee. Enjoy!
