Had some fun this weekend cooking vegan falafel burgers for my meat eater friends! And guess what? They actually liked it! Not so junky, but very yummy! Served them together with oven baked regular and sweet potatoes, and tomato-cucumber-paprika salad!
Start by making falafel first!
Ingredients for falafel:
- 2 cans of chickpeas
- 2 handful of spinach
- 1/2 onion
- 4-5 garlic cloves
- spices – cumin, salt, garlic powder, pepper, paprika
- 2 table spoons of chickpea or regular flour (but not mandatory)
Process everything in the food processor until mixture is even. It might take some time and from time to time you will need to give some help with a spoon as the mixture will start to stick on the sides of the food processor!
Once it is done, start making little round falafel ‘pancakes’ and adjust the size to the burger bun. You can either fry it on the pan or bake it in the oven. On the pan you will need a quite amount of oil, but in the oven oil wouldn’t be necessary at all (in the oven bake it for approximately 20 min in 180°C – 350°F).
When falafels are done, proceed with making guacamole!
Ingredients for guacamole:
- 3 small/medium sized avocados
- 1/2 onion
- 1/2 paprika
- 3 table spoons lemon juice
- spices – salt, garlic powder, pepper, paprika
Start by piling avocados, adding spices, lemon juice and smashing them with a fork until it has creamy and even consistency. Then chop onion and paprika as tiny as you can and mix it. Your guacamole is ready!
When both – falafels and guacamole are ready, you can start to make your burgers! As extra you will need some lettuce, tomatoes, pickles, onions and, of course, burger buns. Order of the burger doesn’t matter, but I prefer it with loads of guacamole! Enjoy!
