Same as with Nutella, chocolate chip cookies is something you can never have too much. Unfortunately there aren’t that many vegan options, or actually no vegan options at all, available in the stores. But, hey, that’s why I am here for you! It is ridiculously easy to make them by yourself and they will taste great! My friends even said that they taste better than the ones from the store.
- 1 1/2 cup flour
- 1 cup sugar
- 1 cup chocolate chips (around 100g)
- 1/2 cup coconut oil
- 75 ml soy milk (water can work as well)
- 1 teasp. vanilla extract
- 1 teasp. salt
- 1/2 teasp. baking soda
Start by mixing sugar, salt and coconut oil. Then add soy milk, vanilla extract and mix again. When it is all well mixed, add baking soda and start adding flour gradually. When dough gets too hard, use your hands to fold the flour in. Lastly, add chocolate chips gradually by folding them in with your hands. Let the dought cool down for approximately 20-30 minutes and meanwhile preheat oven to 180°C (350°F).
Make cookies in form you wish, but remember to leave enough space between them incase they expand during baking process. Another tip – don’t use water while making them, it will make your hands become even more sticky!
Bake for approximately 10-12 minutes or until they are nice and brown. When cookies are done, let them cool down completely before removing from the pan.
