St. Patrick’s Day Green Velvet vegan cake

St. Patrick’s Day is just around the corner and therefore I decided to come up with a recipe and make this nice, green velvet cake in a veganized version. Because what can represent veganism and St. Patrick’s Day better than green stuff? And what can boost your mood better than a piece of cake?
This Green Velvet cake consists of 2 layers and coconut cream frosting

Ingredients for the cake:

  • 2 cups flour
  • 1 cup soy milk
  • 1 cup sugar
  • 1 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons green colouring

Ingredients for the frosting: 

  • cream from 1 can of coconut milk
  • 1/2 cup powder sugar
  • 1 teasp. vanilla extract


Start with making the frosting first, because it will have to cool down in the fridge for couple of hours. Recipe here and video here

Then continue with the cake and mix together all the dry ingredients – flour, sugar, baking soda, salt and cocoa powder. Then add vegetable oil, mix it and add soy milk, apple cider vinegar and mix again. As last add green colouring and mix it in well. Before baking preheat the oven to 180°C (350°F). Place dough in a cooking form in size of approximately 20 cm diameter and bake for 45-55 minutes. When it is done, let it cool down and cut it horizontally in a half to make 2 layers. Spread it with coconut frosting and decorate with some pistachios or as you wish.
