Banana bread. Gluten free

I have always thought that bananas are universal fruits. They go good with everything, always improve taste and makes it more delicious. At least in my opinion it is like that. And so they do the same with bread. Banana bread is one of my favourite types of sweet bread and I would like to share my recipe of how to make a gluten free version of it. 

Ingredients:

  • 3 medium bananas
  • 1 1/2 gluten free flour
  • 1/2 vegetable butter or oil
  • 1/2 cup brown sugar (you can also use regular sugar)
  • 1 teasp. vanilla extract
  • 1 teasp. baking soda
  • 1 teasp. xanthan gum
  • 1/2 teasp. salt

(If making non gluten-free banana bread, use regular flour and there is no need for xanthan gum in that case.)

Process: 

Start by processing or smashing with fork bananas with sugar until it looks like a baby food. Add plant butter/oil, vanilla extract, xanthan gum, baking soda and salt. Process or mix it together. Then start gradually adding gluten free flour and mix it (or even fold it in with hands) well. Place dough in a cooking form, preheat oven to 180°C (350°F) and bake for 45-50 minutes until ready.
