Orgies with chocolate in my kitchen again! This time making Chocolate Ganache fruit and nut cake.Dates, cranberries, nuts and chocolate is a perfect combo! Texture of the cake is very creamy and overall it is super delicious, therefore, be prepared, it won’t be just one slice of cake you will eat!  However, if you do manage to fall in addiction with this cake, don’t worry, recipe is very easy and no-bake! 

Ingredients for crust:

  • 1/2 cup dates
  • 1/2 cup cashews

 

Ingredients for filling:

  • 250 g (2 1/2 bars chocolate)
  • 250 ml coconut milk
  • handful of cranberries or raisins (optional)

 

Process:

Start by preparing the crust – process dates and cashews in the food processor until they become sticky. Prepare form and parchment paper so it is easier to take the cake out afterwards. Place crust in the form and let it cool down in the fridge for couple of minutes. Then start preparing the filling. Brake chocolate in smaller pieces and heat up the coconut milk (do not boil it). Pour coconut milk on the chocolate and let it sit for 1-2 minutes, then stir it until consistency is even. GANACHE IS READY! Add cranberries or raisins if you wish (they will give an extra fruity taste) and pour the mixture on the crust. Decorate with nuts and let it cool down in the fridge over night.

    I made this, and it’s so delicious! I had extra of the chocolate layer, so I made 3 extra ‘muffins’ with it.
