Fudgy black bean brownies. Vegan and gluten free

Who would ever think that you can make something sweet out of beans? Well, it is possible! And it tastes super good! It is not that easy to resist these fudgy black bean brownies, but the good thing is that they are healthier than the regular ones and also in my opinion much easier to make! Furthermore, you cannot taste beans at all!

Ingredients:

  • 2 cups black beans (boiled or from a can)
  • 1 cup oats
  • 5 tbsp. cocoa powder
  • 1/2 cup sugar
  • 1/2 cup soy milk
  • 1/4 cup coconut oil
  • 2 tsp. vanilla extract
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 100 g chocolate chunks

Process:

Start by processing everything in the food processor (except chocolate chunks) until it has quite smooth consistency. (Before processing mix all ingredients with a spoons so it is easier for the food processor.) Let it sit for couple of minutes and mix in 2/3 of your chocolate chunks. Place dough in an even layer in the cooking pan with parchment paper and decorate top of it with the rest of the chocolate chunks. Bake in 180°C (350°F) for 40-50 minutes until it is done. Let it cool down and enjoy the fudgy black bean brownies!
