2 ingredient meatballs – buckwheat and beans. Vegan and gluten free

Video recipe here!

Extremely easy homemade substitute for vegan meatballs, which are healthier and also gluten free! They require only 2 main ingredients and doesn’t take a lot of time to make! Goes perfectly together with pasta or on the side of your dish!

  • 1 1/2 cups buckwheat (boiled)
  • 1 can kidney beans
  • 1 onion (optional)
  • 2 garlic cloves (optional)
  • spices – salt, pepper, garlic powder, paprika, cumin

Start by boiling buckwheat in salted water. (It is approximately 1/2 cup dry buckwheat in 1 1/2 – 2 cups water.) When that is done, let it cool down and process it together in the food processor with 1 can of kidney beans and spices as salt, pepper, garlic powder, paprika and cumin – it is up to your taste buds. As optional you can also add 1 onion and couple of garlic cloves. When mixture becomes more or less even you can start to shape it in a form of balls and fry them on the pan. If making pasta, you can add tomato sauce to the fried “meatballs” and cover your boiled spaghetti with it. Yum!
