Chickpea Chocolate cake (gluten free)

It was already pretty weird when I discovered that you can replace egg-white with aquafaba (liquid from the chickpea can), but now, when I found out that chickpeas itself actually taste good in the cake (yes, they do!)… it just blew my mind away! It kind of reminds me of and tastes like cheese cake, but, of course, better!

White bean-avocado-spinach ‘hummus’

Avocado is probably one of the most loved fruits in the world and therefore hummus version with it must be, and I promise it is, delicious!

Ingredients:

  • 1 cup (250 ml) white beans (first you have to soak them overnight and then boil for approximately 1 hour)
  • half medium sized avocado
  • 50 ml soy cream
  • 1 garlic clove
  • handful of spinach
  • spices – salt, garlic powder, black pepper (up to taste)

Brown pea ‘hummus’

Brown peas are typical Latvian dish eaten during Christmas eve and I am actually not sure if people from other countries are familiar with brown peas, but why not to make hummus out of them?

Ingredients:

  • 1 cup (250 ml) of boiled brown peas (first you have to soak them overnight and then boil for approx. 1 hour)
  • 50 ml soy cream
  • 1 garlic clove
  • 1/4 of juice of a lemon

Chick pea hummus

Quite easy to make and delicious. Another great dipping or topping you can use for sandwiches, chips, pizza or eat it as it is and add to other dishes is hummus!
