Potato soup with carrots and peas

In my home country Latvia potatoes are considered as ‘substitute’ of bread. Basically, if you don’t have bread at home, you will have potatoes for sure! And most of the people, including myself, are huge fans of potatoes. We are cooking and eating them in several different ways – boiled, baked, fried, mashed, added to salads, soups etc. However, it is just recently when I discovered potato soup and, luckily for me, recipe is very easy.

Ingredients (for approx. 3 portions):

  • 5-7 potatoes
  • 1 onion
  • 3 garlic cloves
  • pinch of salt
  • pinch of other spices – black pepper, paprika etc. (optional)
  • half a cup of cut carrots (optional)
  • half a cup of green peas (optional)
